Oolong tea can be described as a 'cross' between green tea and black tea - it requires to go through light fermentation during its manufacturing process resulting in a partially oxidized tea.
There are three main styles of Oolongs: Traditional Dark Oolongs made from more mature shoots of top 3-4 open leaves, Pouchongs - lightly oxidized and lightly rolled leaves in intense green colour, and Jade Oolongs with the infusion from pale to dark green and deliciously sweet profile with the notes of spring flowers (balled oolongs). Traditionally, oolong teas are enjoyed in small quantities so the subtle shifts of character can be recognized.

Steeping: Oolong teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. After that, the tea is reinfused and poured into the cup after about 1 minute. The leaves may be reinfused several times. Brew for 5 to 7 minutes.

Cup Characteristics: Classic oolong. Tightly rolled leaves transition to delicate orchid and pear notes, haunting finish. Brew a pot and experience what some tasters call Champagne of Taiwan. Alishan teas are produced according to the methods established by the early planters: Fresh leaf is hand plucked and immediately wilted in the sun for a period of time. Next, they are placed in baskets and shaken to bruise the leaves and release the enzymes that produce flavor. This is followed by a period of oxidization after which the leaves are laid out to dry and finally fired. The result is nothing short of a spectacular Oolong - an almost perfect example of the best the Alishan region has to offer. Ingredients: Luxury Oolong tea. Infusion: Translucent and sparkling like diamonds.

Cup Characteristics: An imperial favorite scented Oolong. Rare and hand selected, Blue Spring Oolong is truly exceptional in the cup - layers of orchid blend with notes of minerals, wheat bread and hints of dry white wine on the finish. In some rural parts of China, Blue Spring Oolong is known as compassionate oolong. Ingredients: Luxury oolong tea, Mallow flowers. Infusion: Pale green yellow liquor, tending slightly amber.

Cup Characteristics: The most unique character best described as premium oolong with sweet milk and light orchid notes peeking out from camellia depths. "Imagine if velvet somehow took liquid form and was blended with a sweet light cream" - it is how steaming cup of Milk Oolong can be described. Milk Oolong, like all Oolongs, is considered a semi-fermented tea (meaning it is somewhere between a black and green tea). Note that it is incredibly tasty with a piece of lemon and organic cane sugar. Ingredients: Luxury oolong tea. Infusion: Tending greenish.

Cup Characteristics: Spritely and clean with light notes of apricot, lingering pleasant sweetness. As a matter of fact, best Ice Oolong is grown in the Wuyi Mountains of Fujian. The leaves are hand plucked in a heavy frost when the buds had become frozen (usually between 4 and 8 am) so that the rolled leaves could capture the unique floral and sweet character of the once frozen buds. Ingredients: Luxury oolong tea. Infusion: Light yellow green.

Cup Characteristics: A premium rare tea with burgundy depth and a light astringent finish. Only available for 3 weeks every April from special tea bushes in northern Taiwan. Super Fancy Formosa Oolong undergoes a slightly longer firing than some others and subsequently produces a cup that is exceedingly smooth, somewhat toasty and long on the finish. An exceptional tea.
