Oolong tea can be described as a 'cross' between green tea and black tea. It requires to go through light fermentation during its manufacturing process. The infusion has a bright yellowish colour, fresh rich flavour and long-lasting aromatic aftertaste. Traditionally, oolong teas are enjoyed in small quantities so the subtle shifts of character can be recognized.
For more information please visit our Tutorial Overview »

Steeping: Oolong teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. After that, the tea is reinfused and poured into the cup after about 1 minute. The leaves may be reinfused several times. Brew for 5 to 7 minutes.

Shelf life of nitrogen-flashed and vacuum sealed packs: 20-22 years.

Alishan High Mountain Oolong
ALISHAN HIGH MOUNTAIN OOLONG
Country of Origin: Taiwan, Tungting Province
Packed in Canada
Grade: Ti Kuan Yin Formosa A
Attitude: 1000 3000 ft above sea level
Manufacture Type: Semi fermented, traditionally processed, small batch crafted, hand sorted

Cup Characteristics: Classic oolong. Tightly rolled leaves transition to delicate orchid and pear notes, haunting finish. Brew a pot and experience what some tasters call Champagne of Taiwan. The name Alishan itself derives from an old aboriginal word Jarissang. The Tsou Tribe, people who inhabited the mountainous region centuries ago, first discovered wild tea produced an elixir when boiled that had the ability to raise spirits and keep the mind. Today's Alishan teas are still produced according to the methods established by the early planters. Fresh leaf is hand plucked and immediately wilted in the sun for a period of time. Next, they are placed in baskets and shaken to bruise the leaves and release the enzymes that produce flavor. This is followed by a period of oxidization after which the leaves are laid out to dry and finally fired. The result is nothing short of a spectacular Oolong - an almost perfect example of the best the Alishan region has to offer.
Ingredients: Luxury Oolong tea. Infusion: Translucent and sparkling like diamonds.
